Ingredients
Fish fillets (such as cod, tilapia, or salmon)
Salt
Black pepper
Olive oil or butter
Lemon wedges
Fresh herbs (optional—parsley or dill work beautifully)
Directions
1. Pat those fish fillets dry with a paper towel to help them sear up beautifully.
2. Sprinkle both sides with salt and black pepper, giving them a good, even coating.
3. Heat a large skillet over medium-high heat, then add your olive oil or butter—whichever you prefer.
4. Once the skillet is nice and hot, gently lay the fillets in, skin-side down if they have skin.
5. Let them cook for 3 to 4 minutes without moving, so they get a lovely golden crust. Flip them carefully and cook for another 2 to 3 minutes on the other side until they're cooked through.
6. Transfer the fish to a plate and finish with a squeeze of lemon and a sprinkle of fresh herbs if you like. Enjoy right away for the best flavor and texture.
