Seasonings: salt, ground pepper, oyster sauce, fish sauce
Instructions:
Marinate the shrimp:
Peel and devein the shrimp. In a bowl, mix the shrimp with minced garlic, 1 tablespoon of cooking wine, 1 tablespoon of oyster sauce, 1 tablespoon of fish sauce, a pinch of salt, and ground pepper. Stir well and let it marinate for 20 minutes.
Prepare the batter:
In a bowl, combine 2 eggs, 3 tablespoons of flour, a pinch of salt, and ground pepper. Whisk until smooth.
Frying:
Dip each marinated shrimp into the batter, then deep-fry in hot oil. Once the shrimp turn lightly golden, remove and drain the excess oil.
Reheat the oil until hot again, then fry the shrimp a second time until both sides are golden and crispy.
Double frying ensures the outer layer stays crunchy while the inside remains tender, juicy, and doesn't become soggy even after some time.
