Grilled Steak with Mac and Cheese and Grilled Veggies

 

Ingredients:

For the Grilled Steak:

2 rib-eye or flank steaks (or your preferred cut)

1 tbsp olive oil

Salt and black pepper (to taste)

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1 tbsp butter (for finishing)

For the Grilled Veggies:

1 bell pepper (sliced)

1 medium onion (sliced)

1 tbsp olive oil

Salt and pepper (to taste)

For the Mac and Cheese:

8 oz elbow macaroni (or your preferred pasta)

2 tbsp butter

2 tbsp all-purpose flour

2 cups whole milk

2 cups shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

1/4 tsp garlic powder

1/4 tsp paprika (optional, for extra flavor)

1/4 cup breadcrumbs (optional for topping)


Instructions:

1. Cook the Mac and Cheese:

Cook the pasta: Boil the elbow macaroni according to the package instructions. Drain and set aside.


Make the roux: In a large pot, melt 2 tablespoons of butter over medium heat. Add the flour and whisk to form a roux. Cook for 1-2 minutes until it turns golden.


Add milk: Slowly pour in the milk while whisking constantly. Continue whisking until the sauce thickens, about 5-7 minutes.


Stir in the cheese: Reduce the heat to low and stir in the shredded cheddar and Parmesan cheese. Continue stirring until the cheese has melted and the sauce is smooth.


Combine with pasta: Add the cooked macaroni to the cheese sauce, stirring to combine. Set aside.


Optional topping: If desired, sprinkle breadcrumbs on top of the mac and cheese and bake at 350°F (175°C) for 10-15 minutes to create a crispy topping.


2. Grill the Veggies:

Prepare the veggies: Heat 1 tablespoon of olive oil in a grill pan or on the grill. Add the sliced bell pepper and onion, seasoning with salt and pepper.


Grill the veggies: Grill the veggies for about 5-7 minutes, turning occasionally until they are tender and lightly charred. Remove from heat and set aside.


3. Grill the Steak:

Season the steak: Rub the steaks with olive oil and season generously with salt, pepper, garlic powder, onion powder, and paprika.


Grill the steaks: Heat a grill pan or outdoor grill over medium-high heat. Cook the steaks for about 4-5 minutes per side for medium-rare, or until your desired doneness is reached.


Finish the steak: Add 1 tablespoon of butter to the steaks during the last minute of cooking, spooning the melted butter over the steaks as they finish cooking.


Rest the steak: Remove the steaks from the grill and let them rest for 5-10 minutes before slicing.


4. Assemble the Dish:

Plate: Serve the grilled steak slices alongside the creamy mac and cheese and grilled veggies.
