1. 10 pieces of chicken (thighs and legs with skin)
2. 2 cups wheat flour
3. 5 tablespoons cornstarch
4. 2 eggs
5. 1 cup evaporated milk
6. 1 teaspoon garlic powder
7. 1 teaspoon onion powder
8. 1 teaspoon paprika
9. 1/2 teaspoon black pepper
10. 1/2 teaspoon salt
11. 1/4 teaspoon dried oregano
12. Oil for frying
Instructions:
1. In a bowl, whisk eggs and evaporated milk. In another bowl, combine flour, cornstarch, and all seasonings.
2. Dip each piece of chicken in the egg mixture, then coat well in the flour mixture.
3. For extra crispiness, repeat the dipping and coating process once more.
4. Heat oil in a deep fryer or heavy pot to 350°F (175°C).
5. Fry chicken in batches for 12–15 minutes or until golden brown and cooked through.
6. Drain on paper towels and let rest a few minutes before serving.
